I’m going to miss my kitchen when I’m away! As evidenced by my newest mad-scientist creation, I’ve been getting my experimentation fix in while I can.

After buying some No Salt Added cottage cheese last week and discovering it to be pretty much tasteless, I’ve been testing out new ways to use cottage cheese that aren’t exactly intuitive (to me, anyway). So tonight, I adapted the frozen-banana soft serve ice cream into a creamier version.

Using only four ingredients, I ended up with a protein-rich, relatively low-fat dessert that filled in the few nutritional blanks left in my day.

Ingredients:

1 frozen banana, sliced

1/2 cup no salt added, low-fat cottage cheese

1 Tbsp ground flax meal

1 Tbsp cocoa powder

Directions:
Put banana in food processor first and blend until small pieces have formed.

Add cottage cheese, flax, and cocoa and continue blending until smooth and fluffy.

Top with granola, chocolate shavings, nuts, or any other desired additions. I added a little cereal for crunch and a drizzle of chocolate sauce. Next time, I think I’ll add some more sliced banana.

This is pretty good stuff, if not something I’d recommend serving in the wooing stage of a relationship. I’m not gonna lie—it’s pretty out there. While it tastes pretty damn good and packs a lot of nutritional punch, it’s probably not gonna inspire your fella to get down on one knee. Unless of course, he’s into the same weird sh*t you are.
