Last night’s dinner was f-ing awesome—and only cost $1.48 per person. It took a little while to make the seitan and rice, roast the zucchini and braise the kale, but it was well worth the collective effort. Further proof that eating on a budget doesn’t have to suck!

My total food costs for Day 3 came out to $7 even—still a tiny bit higher than the $6.64 I was aiming for, but not by much. All that leftover seitan is going to come in handy over the next few days.

Today, in addition to tracking cost, I have to make note of where my food came from. Already, this morning, we have California (peanut butter), Ecuador (banana), Massachusetts (tea), and New Jersey (oatmeal) represented!
