The last few months I’ve been using cauliflower rice in a lot of different recipes. Salads, veggie-and-protein bowls, falafel plates, smoothies…
Usually I make it on the stovetop, but one day I wanted to see how it came out if I made it in the microwave. Turned out it was stupid-easy and came out great! Here’s the recipe.
Cauliflower Rice in the Microwave
Ingredients:
- 10 ounce container of pre-riced cauliflower or 1 large head of cauliflower, cut into florets and pulsed in a food processor until it looks like rice
- 1-2 tablespoons water
Directions:
- Place cauliflower and water into a large glass bowl with a lid.
- Cover and Microwave on HIGH for 3-4 minutes or until cauliflower is soft but not mushy.
Have you tried cauliflower rice? What’s your favorite way to enjoy it?
