Do you ever try something and then wonder what took you so damn long? That happened to me the other day when I added a 1/4 tsp of xanthan gum to my smoothie. A google search led me to SmoothieGirlEatsToo’s very instructional post on thickening smoothies, and holy sh!t. Not going back ever. The texture was very similar to that of a Wendy’s frosty, which is a very good thing in my book.
