Happy first day of March! Today kicks off National Nutrition Month. The 2011 is Eat Right with Color!

Though it may seem challenging at first if you’re used to a steady diet of beige foods like chicken, bread, and potatoes, you’ll find pretty quickly how easy it can be to arrange a rainbow on your plate.

Aim for rich tones of red (cherries, strawberries, peppers), orange (sweet potatoes, pumpkin, carrots, cantaloupe, peaches), yellow (squash, corn), green (spinach, kale, chard, broccoli, peppers, brussels sprouts, zucchini), blue (blueberries), and purple (plums, blackberries, raisins, eggplant, purple cabbage).
