I am a terrible baker. I’ve improved considerably over the years, but there are still disasters.

Yesterday was my dad’s birthday. When I talked about some of my dad’s favorite foods back in June on Fathers’ Day, I mentioned that he loves my mom’s apple pie. Well he should—it’s delicious. Another bonus is that it has very few ingredients, little added sugar, and is a cinch to make. He told me he ate some for breakfast yesterday, which is perhaps the best way to enjoy it, but it’s also great warm and topped with vanilla ice cream.

Ingredients:

  • 5-6 apples, peeled, cored and chopped (a mix is fine, but avoid Macintosh)
  • 1-2 tsp cinnamon
  • 1/4 c honey or maple syrup (agave or sugar is ok too)
  • 1-2 tbsp flour
  • 2 frozen pie crusts (homemade is great too if you don’t hate making pie crust like me)

Directions: 

  1. Preheat oven to 325o F.
  2. Toss apple pieces with cinnamon until well mixed. Add honey or syrup.
  3. Add flour as needed to thicken. Mix well.
  4. Pour apple mixture into one thawed crust.
  5. Invert the other crust and place over pie. Cut slits in top.
  6. Bake until golden brown, about 1 hour.
