When it comes to healthy snacks, weird can totally be good. This is one of my favorite 200-calorie snacks when you’re craving something sweet. It’s super-easy to make. You can even do it in an office microwave.
It also makes a good breakfast—maybe just add a little more peanut butter. You can also swap in your favorite nut butter.
PB & J Sweet Potato
- 1 small sweet potato
- 1 teaspoon peanut butter
- 1 teaspoon jelly
- Prick sweet potato with a fork. Steam in the microwave until soft.
- Slice open sweet potato and spread with peanut butter and jelly
- Eat out of the skin with a spoon.
