Yesterday I went to Chinatown to stock up on tea—I get cranky when my stash gets low—and I picked up a few other items. Aside from jasmine green tea and gunpowder green pearls, I brought home water chestnuts, Japanese eggplants, baby bok choy, vegetarian duck (glorified seitan), and a young coconut for Chris.

I have been craving eggplant and ginger hardcore lately, so I was excited to try this recipe for Spicy Glazed Eggplant. It was super-easy to make and delicious. I may have added two or three times the amount of ginger called for…img 3229 - Spicy Eggplant and Stir-Fry

To go along with it, I made a stir-fry with more ginger and garlic, the bok choy, water chestnuts, vegetarian duck, and some leftover steamed broccoli. I threw in the last of a batch of brown rice and called it dinner.img 3230 - Spicy Eggplant and Stir-Fry
