Pardon the radio silence. I’ve had a very busy couple of days. Luckily, I had enough energy when I got home tonight to make this:

Soba noodles with baby bok choy, kale, edamame, canned vegetarian duck (oh, fake meat…), and lots of garlic and ginger. There was also an improvised miso-soy sauce involving miso paste, rice vinegar, and soy sauce. I wanted to cram in as many veggies as possible, and I loved the way all these flavors blended together.

I made enough for four servings so lunch for tomorrow will be taken care of. Cooking in bulk really makes things so much simpler. And with that said, back to work…
