Thursday again. It’s been quite a week. As we do every Thursday, here’s some random stuff from the week. I mean, there’s the obvious. The Presidential election. That happened. In all 4-plus years I’ve lived in my apartment, it was the first time I ever left the TV on when I got in bed.

Just, well. Wow. Because I have a rule about not talking politics and other certain hot-button issues on this here blog (let’s keep things light and be nice to each other), I won’t go into too much detail, but if soup is one of my comfort foods, you can bet I’ll be cooking a lot of soup in the coming weeks/months/four years. This election was something else—so much hate on both sides. I’m choosing to channel my confused emotions into a renewed focus on making a positive impact with what I have to work with. And soup.

While watching the coverage on TV and catching up on work, I did enjoy a nice dinner of salmon, roasted sweet potato, and sautéed greens. For an appetizer (aka I was in meetings all afternoon and didn’t get to have a snack), I enjoyed some prosciutto, roasted eggplant, roasted garlic, and artichoke hearts with a drizzle of balsamic reduction. And wine.

Some other stuff:

*Speaking of soup, I was interviewed for this Beach Body article about the best soups you can eat.

*Post-election media giving you a nervous stomach? Probiotic-rich foods like yogurt, kefir, kmichi, and sauerkraut, can help you get back on track. The folks at Good Culture recently sent me some of their whole milk cottage cheese to try, which also contains probiotics. I didn’t love the flavored varieties, but the classic plain is absolutely delicious. Organic and non-GMO made with milk from grass-fed cows? I can totally get into that.

*I started a new notebook this week. That’s always so exciting. No matter how old I’ll get, I don’t think I’ll ever get over the first-page rush of excitement.

*Looking for some tasty lighter comfort food recipes to get you on track for the holiday season? Check out my Shape story on spaghetti squash recipes from dietitians. I have a bunch of these pinned to try.

*I was recently quoted in this Self article about Khloe Kardashian’s take on food kravings

*This round-up of freezer-friendly meals on EA Stewart’s The Spicy RD. I can’t wait to try some of these.

How did you spend Tuesday night? How do you deal with food cravings? Any favorite spaghetti squash recipes?
