Welcome to another Running with Spoons Thinking Out Loud link party where stream-of-consciousness is the name of the game! Thanks to Amanda for hosting!
Thinking-Out-Loud2

My schedule is all over the place this week. Good thing today’s post is all about randomness! Here’s some stuff in my universe this week:

1.) My copy of Seriously Delish arrived the other day—love it! I haven’t been this excited about a cookbook in a while, but Jessica Merchant’s blog, How Sweet It Is, is one of my favorites. Her hilarious posts and drool-worthy recipes are the perfect counter-balance to all the reading I do about metabolism, vitamin deficiencies, and other nutritional bits and pieces. The book is freaking wonderful—am I nerd for finding it a fun read? Yes, this cookbook is fun and full of tasty-looking things I want to make ASAP.  Seriously Delish

2.) Bacon at brunch on Sunday, vegan kale salad for dinner on Monday—moderation, right there. This beauty had kale massaged in a simple miso-tahini-apple-cider-vinegar dressing and tossed with crispy roasted chickpeas, roasted yellow zucchini, roasted eggplant, and heirloom tomato. I also added some hemp seeds and nutritional yeast to up the crunchy granola nutrient/satiety factor. kale salad

3.) Speaking of brunch…

I can’t wait for the Women Who Brunch anniversary party tonight!

4.) September may be here, but there were still peaches at the farmers’ market this week. May as well…I made a ginger peach crumble that I wish I had been making all summer long. Ah, well. There’s always next year. Recipe coming Monday! peach ginger crumble

5.) Oh, and then there was that time Eli picked up a stick that was covered in tar and I had to trim his beard/mouth-fur to get it out. He simply laid there and enjoyed the spa treatment, not seeming to comprehend my level of freaked out-ness. Once I realized he was going to be okay, of course, it was funny. Dude looked like the Joker. Now he just looks like Eli again. Oh dear, puppies are crazy. Eli tar trim

What’s on your mind today?
