By the time you read this, I’ll be in Newport, taking in the Folk Festival. Because of grad school, I had to miss out the past few years, so I was psyched to be able to say yes this time around! There are so many acts I want to see.

I did my best to work through all the perishables throughout the week, as I usually do before a trip. Sometimes these use-it-up creations are a small disaster, but other times, they turn out amazingly.

Go figure I’d finally make the perfect massaged-kale salad while rushing through Friday instead of laboring over it. What I didn’t skimp on was separating the leaves from the stems. I also added extra lemon to the miso-tahini dressing and mixed in nutritional yeast, roasted pepper, and tomato. Served alongside a veggie burger with the last of the smoked mozzarella, it certainly didn’t feel like a “making do” kind of meal.

This is my first trip using my new suitcase. I’d never bought one before, so it was kind of a big deal. It makes me really happy.
