In keeping with this month’s green theme, this post contains a lot of chlorophyl. I’m still trying to make mostly things to use up random canned goods & such, but Sunday I had plans with my mom, which was really nice.

WHOA-OH OH—I just remembered that today is the spring equinox. I don’t know about you, but I am so ready for spring weather to freaking get here already. I’m getting to that breaking point where I listen way too much to the Postal Service for my own good (especially this “new” song I just heard for the first time last weekend) and make big little life decisions in between headaches. I’m sure there’s a planetary scapegoat I could pin this on, but I think I’ll just stick with a lingering case of the winter-blahs. These dim photos are bumming me out.

Breakfast: Chocolate oatmeal with egg whites (and canned pumpkin mixed in), topped with the other half of the banana I used to cook the oats.

Lunch: Grilled branzino with broccolini, roasted potatoes, and brussels sprouts; an unpictured glass of champagne that came with my “brunch.” Weird pairing, but hey, why not?

Snack: (unpictured) post-workout cottage cheese with blueberries and a crumbled graham cracker

Dinner: Salad with leftover roasted eggplant & pepper, chickpeas, and feta; olive foccacia from the flea market.

Snack: Sliced apple with dip/fluff made from PB2, cocoa powder, and more pumpkin—no way to make it sound good, but it tasted great with the tart apple.
