Happy What I Ate Wednesday. Can you believe it’s New Year’s Eve? I’m actually going out this year. After staying home and going to bed before midnight last year (I had to work the next day), I figured I’d do the opposite, just to remind myself what it’s like to be normal or something.

As I mentioned the other day, I had a really nice Christmas with my family. I went to back to the city on Saturday, since I was working at the hospital on Sunday. My parents were kind enough to give me a ride back to the city, which gave us an excuse to have lunch together.

The morning started in New Jersey, though, where I slept in until 7:30 (I know, I know) and enjoyed some light reading time of the elliptical machine, followed by breakfast. I made  oats with flax, cottage cheese, and pumpkin pie spice and topped it with leftover poached pear and peanut butter.Oats with poached pear

Before my parents headed home, we had lunch at a little place called Arte Cafe we all like. I ordered the grilled salmon with spinach & butternut squash sauce and also enjoyed an unpictured corn (I think it was corn) biscuit.Arte Cafe salmon

Midway through a laundry/cleaning spree, I took a snack break: Plain Siggi’s yogurt with chia seeds, chopped dried fig, cinnamon, and maple syrup.yogurt with chia and fig

Dinner: Cauliflower rice stir-fry with edamame, avocado, and a poached egg (sorry, it’s really ugly). cauliflower rice with egg

I had a piece of chocolate for dessert. I don’t usually like milk chocolate, but this is an exception. lindt chocolate snowman

A few hours later after a lot of editorial work, I needed another snack: A sliced apple with goat cheese and fig jam, plus a few fig & olive crackers from Trader Joe’s. I don’t normally need something so filling so close to bed, but my stomach was growling. It happens. Apple and goat cheese

So there’s another day in the life of “What a Nutritionist Eats.” Hope you have a great New Year’s celebration tonight, whatever you’re doing. Cheers to a beautiful 2015!

What’s the best thing you’ve eaten recently? What’s your favorite kind of chocolate? New Year’s Eve plans?
