…And somehow it’s What I Ate Wednesday. This has been a really busy week with lots of information to retain, so let’s just jump right into the “What I Ate” part, shall we?

Since I showed you a lot of weekends recently, here’s a look at a Friday, when I worked from home but ran around a lot between meetings, errands, and the like. This was a crazy day, but crazy doing things I love, so it didn’t feel as crazy as it was. That’s a lot of crazy for one sentence, I know. Welcome to my world.

Breakfast: An egg sandwich and greens. For the dressing, I just used a teaspoon each of tahini sauce and water plus a pinch of goat cheese. Easy-peasy.

Snack: A plain yogurt (Siggi’s—what a nice treat!) with cinnamon, flax, and blueberries. I was in such a rush to get out the door, though, I forgot to take a picture.

Lunch: I didn’t get home from a meeting until almost 3 pm, so I threw together this smoked salmon & avocado on another sandwich thin and served along with some more greens and leftover roasted veggies. White balsamic vinegar for dressing. I had about 10 minutes to eat before a phone meeting. Not great to rush, but sometimes sometimes you just have to go with the flow.

Snack: A sliced apple with PB2 sauce and later, a ginger kombucha—again, no picture because I was using my phone to talk  and totally forgot about my real camera. Whoops.

Dinner: An assortment of leftover roasted veggies & baby spinach over steamed sweet potato and chicken. I added tahini sauce and goat cheese on top. sweet potato chicken veggie bowl

Snack: I was still raging hungry barely an hour after dinner so had more yogurt (this time, the plain Greek stuff from Trader Joe’s) with cocoa powder and raspberries. My computer ate my photo because I guess it was really hungry too. Or just totally f***ing with me.
