Here we are at another What I Ate Wednesday. Hope you’re having a great week. I’ve been loving the light change and can’t wait for Daylight Savings, even if I know the transition can be tough on sleep initially. I’m headed on a short trip out of town this weekend to present at a conference, so just trying to get everything squared away so I can relax a little. Even when it’s work-related (maybe especially when it’s work-related), I love travel. And hotel beds. Except that one time I think a mouse scurried across my foot in the night. That was fun. 

Anyway, here’s to hoping no mice this time. How about we do the “what I ate” part of this post now? Here’s what was on the menu last Saturday:

Breakfast: Oats in a near-empty peanut butter jar. This is my favorite way to enjoy that last tablespoon at the bottom. These are some dark chocolate oats with a little extra pumpkin added in there. Chocolate chips are a must some days. Even a teaspoon adds a lot of awesome. pumpkin chocolate oats in a jar
Lunch: Last week and into the weekend I was really digging salad with avocado, hard-boiled egg or chicken, and roasted beet hummus.  Not to sound like one of those “la la la eat the rainbow” people, but sometimes it feels good to eat the f***ing rainbow for lunch.

Snacks: Plain yogurt with cocoa powder and coconut flour. I need to get on a new kick. Starting next week maybe.

Dinner: I’d made some pork in the slow-cooker, so I had that with some spinach and parm and an unpictured sweet potato on the side—this is a recycled photo from when I added broth and called it soup because I just totally forgot to snap a picture, I was so hungry! pork and spinach

Bedtime Snack: Sliced banana with PB2 sauce and leftover homemade whipped cream; a few crushed Golden Grahams on top—leftover from a recipe test fail.
