Happy What I Ate Wednesday. How’s your week going? I’m having one of those weeks where I’m running around a lot, but I actually got to recharge over the weekend, so I figured for this week’s “what I ate” post, I’d share some of that. Last weekend I had a rare Saturday and Sunday off, so I went to visit my family. I had such a nice time.
Two years ago last Sunday was my 2-year Eli-versary. It’s hard to believe it’s been two years since this little dude came into my life. So many laughs, so much love! Thank all that is holy for puppies. It was nice to spend some time with him and the fam.
Breakfast Saturday: Savory Oats
Lunch: A delicious salad with arugula, fennel, roasted eggplant, and salmon
Snack: unpictured Greek yogurt with cinnamon, chia seeds, and a drizzle of maple syrup
Dinner: Out, no phones allowed (kind of love that, actually). I had oysters to start and then scallops in a black garlic sauce with asparagus and fingerling potatoes. Two bourbons (whoops).
Dessert: Fruit and herbal tea.
Sunday Breakfast: Threw together savory oats with flax, spinach and an egg beaten in. I topped it with plain Greek yogurt and paprika to see how it tasted—loved it!
Post-Yoga Snack: Plain Greek yogurt with ground flax, cinnamon, and a drizzle of maple syrup
Late Lunch: Out with my grandfather, so again, no photos. I got a simple salad with olive oil and lemon and had a few olives to start. Then I had salmon (yes, again—I was on a roll) with some green beans. I wanted wine but had coffee and lots of water to drink because I still had a tiny “why did I have two bourbons last night” headache.
Dinner: Once I got back to the city, I did some cleaning and then threw together an assortment of what was in my fridge and freezer for dinner. That turned out to be some spinach and cauliflower rice my mom sent home with me, plus some frozen grilled cauliflower, frozen peas, and a Trader Joe’s vegetable masala burger. I added some goat cheese and tahini. Ugly but good.
Bedtime Snack: Some of this ricotta cheesecake dip with cocoa powder mixed in. I added some sliced strawberries, chocolate chips, and a spoonful of leftover crumbled Golden Grahams. Whatever works!
