Happy Wednesday! Can you believe Thanksgiving is tomorrow? I’m going to be spending some time with the fam, but that means I’ve been trying to squeeze in some extra work and to-do list stuff beforehand. Case in point: I worked last weekend at the hospital, since I asked to be off the schedule for Thanksgiving and the December holidays. For this week’s “what I ate” post, I’m sharing a look at what I ate Saturday.

Breakfast: Savory breakfasts hold me over a lot longer on crazy clinical days. These savory oats with tahini & eggplant dip totally hit the spot and kept me going for over four hours—hard to do. Pardon the recycled photo, but it was exactly the same thing.

Lunch: A colorful #desklunch salad never gets old. I added tuna and olives to this for a Mediterranean feel. Partway through the afternoon, I had an apple as a snack and a bottle of kombucha. I felt like my immune system was dragging a bit, and I always reach for probiotic-rich foods and drinks pull me back together. I like to visualize all those little bugs fighting the good fight. If nothing else, maybe the placebo effect helps?

After-Work Snack: I was so hungry when I finally got home, so I mixed a tablespoon of coconut flour plus some vanilla extract and cinnamon into some plain Greek yogurt and topped it with homemade cranberry sauce. It’s one of those things I crave this time of year. Perfect!

Dinner: I had leftovers of something I made Friday night, which was parsnip puree with sautéed cabbage, and root veggies. I added some slow-cooked black garlic pork (similar to this recipe but with red wine and rosemary instead of soy sauce in there) I’d made and froze leftovers of. Ugly photo but delicious.

Bedtime Snack: I made this apple pie-inspired snack I’m hung up on. Just a chopped apple with pumpkin pie spice and vanilla extract, microwaved until soft (recipe here). I added a teaspoon of peanut butter.
