While jury duty is not how I would choose to spend a snowy day, it’s an interesting process—and of course it felt good to just get it done. Some people love jury duty, and maybe if I had a job working for someone else who paid my salary while I served, it would be less anxiety-provoking and more straight-up fascinating. That said, this is something a lot of small business owners and solo-  deal with, so it was a good exercise in learning to be flexible. I actually got randomly selected for one trial but after some questioning was sent home at the end of the day and given my proof of service.

Food wise, I had no idea how the day would pan out, so I brought enough snacks to cobble together a balanced meal. I was glad I did—the weather was so crummy out I did not want to wander in search of la place to spend my lunch break.  Again, practice at flexibility.

For this week’s What I Ate Wednesday post I’m sharing a look at what I ate through the day.

WIAW 362 Jury Duty

Breakfast: A breakfast salad with random veggies, avocado, and sauerkraut—sounds weird but it totally hit the spot
Snacks that turned out to be lunch: Sliced veggies, guacamole, turkey jerky, and I ended up buying a yogurt and stirring in a pack of this Hodgson Mill Flax Chia mix
Post-duty snack: Clood orange (that I didn’t eat during the day) and collagen hot cocoa
Dinner: Turkey soup from the freezer, leftover veggies & roasted purple sweet potato
Late-night snack: Greek yogurt (about 1/3 cup)

What are some of your favorite on-the-go snacks?
