Since it’s been a while since I’ve shared an actual Wednesday’s meals and snacks in a What I Ate Wednesday post, I figured I’d do just that today.

It’s a smaller part of my business but corporate wellness has been part of the picture for a long time. Helping people meet their goals and have a better workday and overall quality of life is rewarding. Working in that setting is also a great learning experience for me because I get to find out what people outside the Wellness bubble are interested in and what they struggle with.

On Wednesdays I usually do nutrition counseling sessions at a company I’ve been with a long time. My days are usually pretty full, so I always make sure I pack healthy food to keep my energy up, and I schedule in a break to take a short walk—that little bit of outside time helps clear my head so I can focus better during my afternoon sessions. Even though I work out in the morning, if I don’t have evening plans on a Wednesday night, sometimes I’ll go to a mellow yoga class. It helps me reset my brain after a full day of patients. That’s exactly what I did on this particular day, when it was raining and I had a lot on my mind. Here’s the “what I ate” part of this post:

Breakfast: pre-workout roasted sweet potatoes; post-workout leftover summer squash frittata
Lunch: Arugula salad with zoodles, radishes, summer squash, avocado, hard boiled eggs, and red wine vinegar; raspberries for dessert
Snack: Plain 5% Greek yogurt with a Hodgson Mill Travel Flax Chia Blend
Dinner: Instant pot chicken with roasted Brussels sprouts & more roasted potatoes; a piece of chocolate for dessert
