Now it’s really the last Wednesday of August! How did that happen?! That also means it’s the last What I Ate Wednesday of the month. This summer has flown by. As always, thanks to Jenn for hosting the weekly link party. To see more WIAW from other bloggers, visit Peas & Crayons.

On Monday, I started a new rotation, the first of my “advanced” rotation, which means I’m already halfway through. The sense I get so far is that I will not be seeing as many patients as in my last rotation, but those I do see will be more complicated. So far, so true. Friday’s full moon (which is a blue moon at that) decided to get the party started a little early. Either that, or sh!t is always that crazy on this unit.

By the time I got home from my first day,  I was so tired, my plans for cooking myself a “nice” dinner kind of went out the window. So I did what I usually do in these situations:

  • Take some grains (grits, in this case—random, but hey), add water.
  • Put it in the microwave for a couple minutes.
  • Throw in whatever vegetables/protein are in the fridge. Microwave a few more minutes.
  • Top with goat cheese and/or tahini. Maybe add a side salad.

If it works, it works. Though it wouldn’t have taken me all that much longer to make, like, pasta, the idea of having to use multiple pots and a colander seemed exhausting.

Breakfast: Steel-cut oats w/ chia seeds, a plum-cot, blueberries, and sunflower seed butter 

Lunch: Cafeteria salad; an apple 

Snacks: Grapes

Dinner: Grits topped with a bunch of veggies, nutritional yeast, tahini, and goat cheese; a side salad (with leftover tofu); an unpictured piece of dark chocolate. 

Snack: Plain yogurt with frozen brownie pieces 

I think I am officially sick of tofu after eating it, like, 5 (?) days in a row. I’m glad I didn’t waste any of what I made, but good god. Timing is everything, I suppose. My body is starting to send me signs that it needs its monthly steak fix. I should get on that.
