Did anyone else have a crazy Wednesday? I totally shouldn’t have even bothered to go to the gym this morning—this day was so freaking busy. My feet only like Frye boots and Birkenstocks, so today’s work appropriate closed-toed shoes were a bit of a problem.

At least I managed to eat some good food to get me through the day. I know you’re probably starting to get sick of my green smoothies, but they’re seriously the best pre-class mini-meal I’ve tried. The trick is to mix in some raw oats after blending and giving them a couple minutes to soak—it adds the perfect amount of staying power I just don’t get from protein powder and the like.

Amusing/embarrassing evidence of my ineptitude in Organic Chemistry lab: While frying an egg for dinner after class, I very stupidly sprayed the cooking spray too near the open flame. Chris was there to witness the resulting fireball and to lecture/laugh at me. Fortunately, all I did was singe off a few arm hairs. No harm, no foul. That’s one more thing I’ll remember never to do ever again!

So, on to the “what I ate” segment of this Wednesday…

Breakfast: Chocolate overnight oats topped with strawberries

Lunch: Surprisingly-good leftovers-salad (sesame tofu over spinach, romaine, roasted pepper and cauliflower tossed with an early-morning afterthought of white balsamic); amaranth crackers; an apple

Snack: Green smoothie (1/2 frozen banana + frozen strawberry + 1/2 c plain yogurt + big handful spinach) topped with granola and a 1/4 tsp coconut oil and oats stirred in

Dinner: Leftover brown rice with roasted cauliflower and an egg; Chris-made side salad

Snack: Chocolate ice cream with chocolate shavings

Finally, after a few weeks of madness, Chris and I have decided to stay another year in our apartment! 3 years is the longest I’ve ever lived somewhere (other than my parents’ house), but that stopped feeling weird a long time ago, or maybe just last summer, when 2 years was the longest I’d ever lived somewhere. I’m looking forward to spending the energy and time that would have gone into moving doing a “deep clean” as we’re calling it and rearranging the furniture—and investing in a white noise machine and sound-blocking curtains.
