So…when I predicted the unpredictable the other day (hah), I wasn’t wrong. At least the crazy has been a mix of  crazy-crazy and good-crazy. Tuesday was a welcome day “off” for an intern meeting and group RD exam prep session.  It was good to get in some organized study time to start getting into “the mode.”  And then it was time for a staff holiday party…The rest of the week looks just as packed, with another presentation, but the finish line is in sight, so cheers to that!

Here’s what I ate on Sunday as I prepped for the madness..

Breakfast: Oats with flax, pumpkin, and cranberries topped with melty peanut butter.

Lunch: Random veggies, a Trader Joe’s masala burger, and a poached egg, topped with hummus and goat cheese IMG_1060

Snack: (unpictured green smoothie)

Dinner: Spaghetti squash with more random veggies, homemade seitan, homemade marinara, and pecorino; a square of dark chocolate IMG_1066
