I love multiples of 11, so I’m happy that today is the 88th What I Ate Wednesday to be more specific. As always, thanks to Jenn for hosting the weekly link party. To see more WIAW from other bloggers, visit Peas & Crayons.

So! I’m finally back in a clinical rotation: staff relief. It’s been ages since I’ve seen any patients over 19, so I’m very happy to be getting back to it.

Because this week is especially busy, I have another Sunday WIAW, which involved a lot of egg whites. After wanted to get around to trying out egg whites in oatmeal for a long-ass time, I finally gave it a shot. The verdict: I like the taste and texture, but it does not photograph well. At least not in my novice hands. It did keep me full through  a busy morning, though. Still, the baked omelette/glorified casserole I made came out far better. IMG_1105

Breakfast: Basically the ugliest breakfast ever—I need to work on presentation—oats with chia seeds, cinnamon & pumpkin pie spice, cranberries, and egg whites, topped with a chocolate PB2 sauce. I was going for dark chocolate cranberry something-ness. IMG_1099

Lunch: Baked egg white omelette with side salad; an unpictured square of dark chocolateIMG_1106

“Snack”: Wine while studying. It was just that kind of day.

I only just realized last week that this year's Beaujolais Nouveau came out a while ago---making up for lost time

Dinner: Leftover red lentil soup topped with leftover roasted veggies and goat cheese; a sprouted grain English muffin with mashed avocado & roasted red pepper IMG_1112

Snack: Plain yogurt w/ cocoa powder, blackberries, and cerealIMG_1113

If you eat eggs/egg whites, do you add them to oatmeal ever? Any tips you’re willing to share?
